Nikolaj Ehlers and Kyle Connor each had a goal and an assist for Winnipeg, and Mark Scheifele had two assists.
The Jets have won their past two games and are 10-4-0 in their last 14.
Martin Necas scored the only goal for the Hurricanes, even though Carolina outshot Winnipeg by a 43-22 margin.
Antti Raanta stopped 20 of 22 shots, including a highlight-reel save on a Connor breakaway in the third period. While Raanta had a solid game, he was outdueled by the goalie at the other end of the ice.
Brossoit was playing in just his sixth game of the season, on a rare night off for regular starter Connor Hellebuyck. Brossoit made the most of the opportunity, coming up big against consistent pressure from the Hurricanes.
Some of Brossoit's best work came in the game's first minute, as he made a pair of impressive saves on Andrei Svechnikov. Later in the first period, Brossoit lost his stick but still deflected Brett Pesce's shot from the slot.
With Carolina dominating early, the Jets didn't manage their first shot on target until 16:31 into the first period. Once their offense started clicking, however, the Jets quickly capitalized.
On a partial two-on-one late in the opening period, Ehlers' pass found a streaking Connor heading toward the net. Connor buried the shot at 16:58 for his team-leading 15th goal.
More crisp passing set up Winnipeg's next goal at 11:39 of the second period, this time with Ehlers on the receiving end. A nice passing play brought the puck into Carolina's zone, and Ehlers finished with a well-placed wrist shot from the slot.
The Hurricanes got some late momentum back with 51 seconds remaining in the middle period. Necas tried a wraparound shot that deflected off the skate of Jets defenseman Dylan DeMelo and into Winnipeg's net.
Necas' fortunate goal set the stage for a tense third period as the Hurricanes chased the equalizer. Brossoit held steady, producing two huge saves in the final two minutes to rob Seth Jarvis and Sebastian Aho.
